Puff Pastry Goat’s Cheese & Onion Tarts
These tarts feature a golden, flaky crust filled with creamy goats cheese and beautifully cooked onions. The contrasting textures and flavors will make your taste buds sing!

Ingredients:
- 1 sheet of puff pastry
- 200g goat’s cheese
- 2 medium onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper, to taste
- 1 egg, beaten (for egg wash)
- Fresh thyme (optional, for garnish)
Instructions:
- Preheat your oven to 200°C (400°F).
- In a large frying pan, heat the olive oil over medium heat. Add the thinly sliced onions and a pinch of salt. Sauté for about 10-15 minutes, stirring occasionally, until the onions are soft and caramelized.
- Once the onions are caramelized, stir in the balsamic vinegar and cook for an additional 2 minutes before removing them from the heat. Season with salt and pepper to taste.
- While the onions are cooking, roll out the puff pastry on a lightly floured surface to about 1/8 inch thick. Cut the pastry into squares or rectangles — about 4 inches by 4 inches works well.
- Place the pastry squares on a baking sheet lined with parchment paper. With a sharp knife, lightly score a border around the edges, about 1/2 inch in from the edge (be careful not to cut all the way through).
- Spread the caramelized onions evenly over the center of each pastry square, leaving the border clear.
- Crumble the goat’s cheese over the onions. Brush the border of the pastry with the beaten egg.
- Bake in the preheated oven for 15-20 minutes, or until the pastry is golden and puffed up.
- Once baked, remove from the oven and allow to cool slightly before garnishing with fresh thyme, if desired.
