Ingredients:

  • 1 sheet of puff pastry
  • 200g goat’s cheese
  • 2 medium onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper, to taste
  • 1 egg, beaten (for egg wash)
  • Fresh thyme (optional, for garnish)

Instructions:

  1. Preheat your oven to 200°C (400°F).
  2. In a large frying pan, heat the olive oil over medium heat. Add the thinly sliced onions and a pinch of salt. Sauté for about 10-15 minutes, stirring occasionally, until the onions are soft and caramelized.
  3. Once the onions are caramelized, stir in the balsamic vinegar and cook for an additional 2 minutes before removing them from the heat. Season with salt and pepper to taste.
  4. While the onions are cooking, roll out the puff pastry on a lightly floured surface to about 1/8 inch thick. Cut the pastry into squares or rectangles — about 4 inches by 4 inches works well.
  5. Place the pastry squares on a baking sheet lined with parchment paper. With a sharp knife, lightly score a border around the edges, about 1/2 inch in from the edge (be careful not to cut all the way through).
  6. Spread the caramelized onions evenly over the center of each pastry square, leaving the border clear.
  7. Crumble the goat’s cheese over the onions. Brush the border of the pastry with the beaten egg.
  8. Bake in the preheated oven for 15-20 minutes, or until the pastry is golden and puffed up.
  9. Once baked, remove from the oven and allow to cool slightly before garnishing with fresh thyme, if desired.
