Queso dip –There’s nothing quite like a warm, cheesy dip to elevate a gathering with friends or a cozy night in. One of my all-time favorites is Queso Dip. It’s creamy, slightly spicy, and incredibly satisfying. Here’s how to whip up this delicious treat!
Queso Dip
This Queso Dip recipe is a crowd-pleaser! Perfect for game day, parties, or movie nights, it pairs wonderfully with tortilla chips or fresh veggies.

Ingredients
- 1 lb Velveeta cheese, cubed
- 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
- 1/2 cup chopped onion
- 1/2 cup diced bell pepper
- 1/2 lb ground beef or sausage, cooked and drained (optional)
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/4 teaspoon cayenne pepper (optional for extra spice)
- Tortilla chips, for serving
Instructions
- In a medium saucepan over medium heat, add the cubed Velveeta cheese. Stir occasionally until melted and creamy.
- Once the cheese is melted, introduce the can of diced tomatoes with green chilies. Stir well to combine.
- Add in the cooked ground beef or sausage if you’re using it, followed by the chopped onion and diced bell pepper. Mix thoroughly.
- Season the mixture with garlic powder, chili powder, and cayenne pepper if you like it spicy. Allow to simmer for about 5-7 minutes, stirring occasionally. This will help the flavors meld.
- Once the dip is heated through and everything is well combined, taste and adjust seasoning as necessary. If it’s too thick, you can add a splash of milk or cream to reach the desired consistency.
- Serve warm with tortilla chips, veggies, or your choice of dippers. Enjoy!
