Ingredients:
- 4-5 medium quinces
- 3 cups of sugar
- Juice of 1 lemon
- Water (for boiling)
Instructions:
- Begin by selecting ripe quinces, as they will yield the best flavor. Wash them thoroughly to remove any wax or dirt.
- Cut the quinces into quarters, keeping the skins and cores intact. These parts contribute pectin, which helps the paste to set.
- Place the quince quarters in a large pot and cover them with water. Bring the water to a boil, then reduce to a simmer. Cook for about 40-50 minutes until the quinces turn soft.
- After cooking, drain the quinces and allow them to cool slightly. Once cool enough to handle, remove the skins and cores, and then puree the flesh in a blender or food processor until smooth.
- Measure the amount of quince puree obtained; you will need an equal amount of sugar by weight. For example, if you have 2 cups of puree, use 2 cups of sugar.
