Pear and Raspberry Bread

Ingredients:

  • 2 ripe pears, peeled and diced
  • 1 cup fresh raspberries (or frozen, thawed and drained)
  • 1/3 cup vegetable oil
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the vegetable oil, brown sugar, and granulated sugar until well combined.
  3. Add the eggs one at a time, followed by the vanilla extract, and mix until smooth.
