Ratatouille is a classic French dish that features an array of fresh vegetables, beautifully arranged and bursting with flavors. It’s a perfect dish to showcase seasonal vegetables and it’s incredibly simple to make while still being impressive.

Ingredients

  • 1 eggplant, thinly sliced
  • 2 zucchini, thinly sliced
  • 2 yellow squash, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 2 cups tomato sauce
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add the minced garlic and sliced onion, cooking until the onion is translucent.
  3. Pour the tomato sauce into the skillet and let it simmer for about 5 minutes. Season with salt and pepper to taste.
  4. Spread the sauce evenly over the bottom of a baking dish.
  5. Arrange the sliced vegetables in an overlapping pattern on top of the tomato sauce. You can be creative with the arrangement to make it visually appealing.
