Rouxless Gumbo

Ingredients:
- 1 pound smoked sausage, sliced
- 1 pound shrimp, peeled and deveined
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups okra, sliced (optional)
- Cooked rice for serving
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large pot, heat some oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5 minutes.
- Add the diced onion, bell pepper, and celery to the pot. Cook for another 5-7 minutes, stirring frequently until the vegetables are tender.
- Stir in the minced garlic, bay leaves, dried thyme, paprika, salt, and pepper, cooking for an additional minute until fragrant.
- Add the can of diced tomatoes (with juices) and chicken broth to the pot. Bring the mixture to a boil.
- Once boiling, reduce heat to low and let it simmer for 20-25 minutes to allow the flavors to meld together.
- In the last 5-10 minutes of cooking, add the shrimp and okra (if using). Cook until the shrimp turns pink and the okra is tender.
- Remove the bay leaves before serving. Ladle the gumbo over a scoop of cooked rice and garnish with chopped parsley.
