Ingredients
For the Sacher Torte, you will need the following ingredients:
- 1 cup (200g) unsweetened chocolate, chopped
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 teaspoon vanilla extract
- 5 large eggs, separated
- 1 cup (120g) all-purpose flour
- 1/2 cup (160g) apricot jam
- 1 cup (240ml) heavy cream
- 2 tablespoons powdered sugar
- Chocolate glaze for topping
Instructions
Now that we have our ingredients ready, it’s time to make the cake. Here’s how to prepare the Sacher Torte:
- Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
- In a double boiler, melt the chopped chocolate. Once melted, remove from heat and let it cool slightly.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add vanilla extract and mix well.
- Beat in egg yolks, one at a time, ensuring each yolk is fully incorporated. Then, fold in the melted chocolate until well combined.
- Sift the flour and gently fold it into the chocolate mixture until just combined.
- In another bowl, beat the egg whites until stiff peaks form. Carefully fold the egg whites into the chocolate batter, making sure not to deflate the mixture.
- Pour the batter into the prepared pan and smooth the top. Bake for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
- Spread warm apricot jam on top of the cooled cake and let it set. Finally, cover with chocolate glaze and serve with whipped cream if desired.
Enjoy your homemade Sacher Torte – it’s the perfect way to treat yourself or your loved ones!
