  • 500g fresh salmon fillets
  • 200g smoked salmon
  • 250g cream cheese
  • 3 tablespoons fresh dill, chopped

  • 2 tablespoons gelatine powder
  • 300ml double cream
  • Capers and lemon slices for garnish

Instructions

  1. Start by preheating your oven to 180°C (350°F). Line a loaf tin with cling film, letting it hang over the edges for easy removal later.
  2. In a food processor, blend the fresh salmon fillets until smooth. Season with salt, pepper, and lemon juice.
  3. In a separate bowl, mix the cream cheese and dill until well combined. Gently fold in the smoked salmon, ensuring not to break it up too much.
  4. Prepare the gelatine according to package instructions, then mix it into the salmon blend. Make sure it’s well combined.
  5. Layer half of the fresh salmon mixture into the prepared loaf tin, followed by half of the cream cheese and smoked salmon mixture.
  6. Add the remaining fresh salmon mixture on top, followed by the rest of the cream cheese mixture. Smooth the top with a spatula.
  7. Cover the loaf tin with cling film and refrigerate for at least 4 hours, or overnight for best results.
  8. Once it’s set, carefully remove the Salmon Terrine from the tin by lifting the cling film. Slice it into thick portions.
