Sausage-Stuffed Butternut Squash

Ingredients

  • 2 medium butternut squashes, halved lengthwise and seeds removed
  • 1 pound Italian sausage (mild or spicy, your choice!)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cooked quinoa or rice
  • 1 cup shredded cheese (mozzarella or cheddar work great)
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Olive oil, for drizzling
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Grab a baking sheet and line it with parchment paper.
  2. Drizzle a little olive oil on the cut sides of the butternut squash halves, season with salt and pepper, and place them cut-side down on the baking sheet. Roast them in the oven for about 30-40 minutes until they’re tender.
