  • 225g (1 ¾ cups) self-raising flour
  • 75g (⅓ cup) unsalted butter, cold and cubed
  • 25g (2 tbsp) caster sugar
  • 150g (1 cup) mixed dried fruit (such as raisins, currants, and sultanas)
  • 150ml (⅔ cup) whole milk
  • 1 egg, beaten (for brushing)

Instructions:

  1. Preheat your oven to 220°C (428°F) and line a baking tray with parchment paper.
  2. In a large bowl, combine the self-raising flour and cold butter. Rub the butter into the flour using your fingertips until the mixture resembles breadcrumbs.
