Cheesy Seafood Enchiladas

Ingredients
- 8 corn tortillas
- 2 cups cooked shrimp, chopped
- 1 cup lump crabmeat, drained and picked over
- 1 cup shredded Monterey Jack cheese
- 1 cup sour cream
- 1 can (10 ounces) diced tomatoes with green chilies
- 1/2 cup chopped green onions
- 1 tablespoon taco seasoning
- 1/2 teaspoon garlic powder
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the chopped shrimp, crabmeat, 1/2 cup of Monterey Jack cheese, sour cream, diced tomatoes with green chilies, green onions, taco seasoning, garlic powder, and a pinch of salt and pepper. Mix well to combine all ingredients.
- Heat the olive oil in a skillet over medium heat. Lightly fry the corn tortillas for about 30 seconds on each side until they are soft. This will make them easier to roll into enchiladas.
