  • 8 corn tortillas
  • 2 cups cooked shrimp, chopped
  • 1 cup lump crabmeat, drained and picked over

  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1/2 cup chopped green onions
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the chopped shrimp, crabmeat, 1/2 cup of Monterey Jack cheese, sour cream, diced tomatoes with green chilies, green onions, taco seasoning, garlic powder, and a pinch of salt and pepper. Mix well to combine all ingredients.
  3. Heat the olive oil in a skillet over medium heat. Lightly fry the corn tortillas for about 30 seconds on each side until they are soft. This will make them easier to roll into enchiladas.
