Ingredients

  • 500 grams ground meat (beef, lamb, or chicken)
  • 100 grams split chana dal (Bengal gram lentils)
  • 1 medium onion, finely chopped
  • 2-3 green chilies, chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon garam masala
  • ½ teaspoon cumin powder
  • ½ teaspoon coriander powder
  • Salt to taste
  • Fresh coriander leaves, chopped
  • Fresh mint leaves, chopped
  • Oil for frying

Instructions

  1. Begin by soaking the chana dal in water for about 2-3 hours. Once soaked, drain and set aside.
  2. In a pot, add the ground meat along with the soaked chana dal, chopped onion, green chilies, ginger-garlic paste, spices, and salt. Mix well.
  3. Add enough water to cover the mixture and cook over medium heat until the meat is tender and the dal is cooked through. This should take around 30-40 minutes.
  4. Once cooked, remove from heat and let it cool slightly. Then, blend the mixture in a food processor until smooth, ensuring there are no large chunks.
  5. Transfer the blended mixture to a bowl, add the chopped coriander and mint leaves, and mix until well combined.
  6. With your hands, shape the mixture into small patties or discs, approximately 1/2 inch thick.
  7. Heat oil in a skillet over medium heat. Once hot, carefully place the patties in the oil and fry until golden brown on both sides. This should take about 3-4 minutes per side.
  8. Once done, place the kebabs on a paper towel-lined plate to drain excess oil.
  9. Serve warm with mint chutney or yogurt sauce for dipping. Enjoy your homemade Shami Kebabs!
