Ingredients
- 500 grams ground meat (beef, lamb, or chicken)
- 100 grams split chana dal (Bengal gram lentils)
- 1 medium onion, finely chopped
- 2-3 green chilies, chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon garam masala
- ½ teaspoon cumin powder
- ½ teaspoon coriander powder
- Salt to taste
- Fresh coriander leaves, chopped
- Fresh mint leaves, chopped
- Oil for frying
Instructions
- Begin by soaking the chana dal in water for about 2-3 hours. Once soaked, drain and set aside.
- In a pot, add the ground meat along with the soaked chana dal, chopped onion, green chilies, ginger-garlic paste, spices, and salt. Mix well.
- Add enough water to cover the mixture and cook over medium heat until the meat is tender and the dal is cooked through. This should take around 30-40 minutes.
- Once cooked, remove from heat and let it cool slightly. Then, blend the mixture in a food processor until smooth, ensuring there are no large chunks.
- Transfer the blended mixture to a bowl, add the chopped coriander and mint leaves, and mix until well combined.
- With your hands, shape the mixture into small patties or discs, approximately 1/2 inch thick.
- Heat oil in a skillet over medium heat. Once hot, carefully place the patties in the oil and fry until golden brown on both sides. This should take about 3-4 minutes per side.
- Once done, place the kebabs on a paper towel-lined plate to drain excess oil.
- Serve warm with mint chutney or yogurt sauce for dipping. Enjoy your homemade Shami Kebabs!
