Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1 teaspoon cayenne pepper
- 1 teaspoon paprika
- Salt and pepper, to taste
- Vegetable oil, for frying
- 4 hoagie rolls
- Shredded lettuce
- Sliced tomatoes
- Pickles (optional)
- Your favorite remoulade sauce
Instructions
- In a large bowl, soak the peeled and deveined shrimp in buttermilk for at least 30 minutes. This helps add moisture and flavor to the shrimp.
- In another bowl, combine the flour, cornmeal, cayenne pepper, paprika, salt, and pepper. Mix well.
- Heat vegetable oil in a deep pan or fryer to 350°F (175°C). You’ll need enough oil to submerge the shrimp for frying.
- Remove the shrimp from the buttermilk and let the excess drip off. Coat each shrimp in the flour-cornmeal mixture, pressing lightly to adhere.
- Carefully place the coated shrimp in the hot oil, cooking in batches if necessary to avoid overcrowding. Fry until golden brown and crispy, about 2-3 minutes per side.
- Once cooked, transfer the shrimp to a paper towel-lined plate to drain any excess oil.
- To assemble the Po’ Boys, slice the hoagie rolls in half lengthwise. Spread a generous amount of remoulade sauce on both sides of the rolls.
- Layer with shredded lettuce, sliced tomatoes, and the crispy shrimp. Add pickles if desired.
- Close the sandwich, slice in half if preferred, and serve immediately!
Enjoy your homemade Shrimp Po’ Boys! They are perfect for gatherings, picnics, or simply a delightful meal at home. This recipe is sure to become a favorite!
