The Best Shrimp Quesadillas
These shrimp quesadillas are packed with tender shrimp, melted cheese, and a medley of fresh ingredients, all nestled in a crispy tortilla. They’re great served with salsa or guacamole, making them a versatile dish for any occasion.

Ingredients
- 1 pound shrimp, peeled and deveined
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1/2 cup chopped bell peppers (optional)
- 1/2 cup chopped onions (optional)
- Sour cream, salsa, or guacamole for serving
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Add the shrimp, garlic powder, paprika, salt, and pepper. If using, add the chopped bell peppers and onions.
- Cook the shrimp for 3-4 minutes, or until they turn pink and are cooked through. Remove the skillet from heat.
- Lay one tortilla in the skillet or on a flat surface. Sprinkle a layer of cheese over half of the tortilla. Add a portion of the cooked shrimp (and any veggies if using) on top of the cheese. Sprinkle another layer of cheese on top of the shrimp.
