Shrimp Scampi
This Shrimp Scampi is full of succulent shrimp, tossed in a luscious garlic butter sauce that’s sure to please. Whether served over pasta or on its own, it’s a dish everyone will love.

Ingredients:
- 1 pound large shrimp, peeled and deveined
- 8 ounces linguine or spaghetti
- 4 tablespoons unsalted butter
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (adjust to taste)
- Salt and black pepper to taste
- 1/4 cup dry white wine (optional)
- 1 tablespoon lemon juice
- 1/4 cup fresh parsley, chopped
Instructions:
- Start by cooking the pasta according to package instructions. Once al dente, reserve about 1/2 cup of the pasta water, then drain the rest and set aside.
- In a large skillet over medium heat, melt the butter and olive oil together. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1 minute, or until fragrant, being careful not to burn the garlic.
- Add the shrimp to the skillet, seasoning them with salt and black pepper. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- If using, pour in the white wine and let it simmer for about 2 minutes to reduce slightly. Stir in the lemon juice and add the reserved pasta water if the sauce seems too thick.
- Return the shrimp to the skillet, add the cooked pasta, and toss everything gently to combine. Adjust seasoning with more salt and pepper if needed.
- Finally, sprinkle the fresh chopped parsley on top for an added burst of flavor and color.
Serve your Shrimp Scampi immediately, and enjoy with a side of crusty bread to soak up all that delightful garlic butter sauce! This dish is sure to become a staple in your meal rotation.
