Ingredients
- 500 grams mutton, bone-in pieces
- 2 cups basmati rice, soaked for 30 minutes
- 2 large onions, thinly sliced
- 1 tomato, chopped
- 1/2 cup yogurt
- 2 tablespoons ginger-garlic paste
- Whole spices: 2-3 green cardamom, 4-5 cloves, 1 cinnamon stick, 1 bay leaf
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- Fresh coriander leaves, chopped
- Fresh mint leaves, chopped
- Salt to taste
- Cooking oil or ghee as needed
Instructions
- In a large pan, heat oil or ghee over medium heat. Add the sliced onions and sauté until golden brown. Remove half for garnishing.
- Add the ginger-garlic paste to the remaining onions and sauté for a minute until fragrant. Incorporate the chopped tomato, and cook until soft.
- Add the mutton pieces to the pan and cook until the meat is browned on all sides. Stir in the yogurt, red chili powder, turmeric, garam masala, and salt, mixing well to coat the mutton.
- Cover the pan and allow the mutton to cook on low heat for about 45 minutes, or until tender. Add a little water if needed to prevent sticking.
- While the mutton cooks, boil water in a separate pot and add the soaked rice along with the whole spices. Cook until the rice is 70% done, then drain it.
- Layer the partially cooked rice over the mutton mixture, sprinkling the chopped coriander and mint leaves on top. Gently mix everything together, being careful not to break the rice grains.
- Cover the pot tightly with a lid and cook on low heat using the dum method for about 30 minutes. This allows the flavors to meld and the rice to finish cooking.
