Slow-Cooked Butternut Squash
This slow-cooked butternut squash recipe is not only simple but also packed with flavor. Using your Crock-Pot means you can set it and forget it until it’s time to eat. Plus, the creamy texture and sweet taste will complement your Thanksgiving feast perfectly.

Ingredients:
- 2 medium butternut squashes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon cayenne pepper (optional, for a kick)
- Salt and pepper to taste
- 1 cup vegetable broth or chicken stock
- 2 tablespoons olive oil or butter
- Fresh parsley for garnish (optional)
Instructions:
- Begin by peeling and dicing the butternut squashes into small cubes. Make sure to remove all the seeds and stringy bits.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it’s translucent, about 5 minutes. Then, add the minced garlic and cook for another minute until fragrant.
- In your slow cooker, combine the diced butternut squash, sautéed onion and garlic, ground cinnamon, nutmeg, cayenne pepper (if using), salt, and pepper. Mix everything until well combined.
- Pour in the vegetable broth or chicken stock, making sure the squash is mostly submerged. This will help it cook evenly.
- Cover the Crock-Pot and cook on low for 6-8 hours or on high for 3-4 hours, until the squash is fork-tender.
- Once it’s done cooking, you can mash the squash right in the pot for a creamy texture or leave it chunky, depending on your preference. Taste and adjust the seasoning if needed.
- Serve warm, garnished with fresh parsley if desired. This dish pairs beautifully with turkey and cranberry sauce!
This slow-cooked butternut squash is bound to be a hit at your Thanksgiving table. Enjoy every bite of this comforting, flavorful side dish!
