Solianka (Russian Beef Soup)

Ingredients:
- 1 pound beef (brisket or stew meat), cut into cubes
- 1 onion, finely chopped
- 2 carrots, sliced
- 3 pickles, diced
- 2 tablespoons tomato paste
- 6 cups beef broth
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 lemon, juiced
- Fresh parsley, chopped for garnish
- Optional: black olives for garnish
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
