Spanakorizo
Spanakorizo, or spinach rice, is a wonderful dish that highlights the simplicity and richness of Greek cooking. This vegetarian recipe is easy to prepare and makes for a perfect meal any day of the week.

Ingredients:
- 1 cup of short-grain rice
- 2 tablespoons of olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 4 cups of fresh spinach, chopped
- 1 cup of vegetable broth (or water)
- 1 tablespoon of lemon juice
- Salt and pepper to taste
- Fresh dill or parsley for garnish (optional)
Instructions:
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the chopped spinach to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the spinach has wilted.
- Next, add the rice to the skillet and stir well, coating it in the olive oil and spinach mixture.
- Pour in the vegetable broth (or water) and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15-20 minutes, or until the rice is tender and has absorbed the liquid.
- Once the rice is cooked, remove from heat and stir in the lemon juice. Season with salt and pepper to taste.
- Garnish with fresh dill or parsley, if desired, and serve warm as a main course or side dish.
