The Real Traditional Greek Spinach Pie

Ingredients

  • 1 package phyllo pastry (about 1 pound)
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 16 ounces fresh spinach, chopped (or 10 ounces frozen, thawed and drained)
  • 8 ounces feta cheese, crumbled
  • 2 large eggs
  • 1/2 cup fresh parsley, chopped
  • 1 teaspoon dried dill (optional)
  • Salt and black pepper to taste
  • 1/4 cup melted butter (for brushing)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Stir in the minced garlic and cook for another 1-2 minutes.
  3. Add the chopped spinach to the skillet, cooking until wilted (if using fresh) or heated through (if using frozen). Remove from heat and allow to cool slightly.
  4. In a mixing bowl, combine the cooled spinach mixture with the crumbled feta cheese, eggs, parsley, and dill (if using). Season with salt and pepper to taste, and mix until well combined.
  5. Lay one sheet of phyllo pastry on a clean surface and brush lightly with melted butter. Place another sheet on top and repeat the process, stacking about 5 sheets in total.
  6. After layering, spoon the spinach mixture along one edge of the phyllo, forming a log shape. Carefully roll the phyllo over the filling to create a log, sealing the edges as you go. Place the rolled pie seam side down on a greased baking sheet.
  7. Brush the top of the pie with additional melted butter and repeat the process with the remaining phyllo and filling to make additional pies.
  8. Bake in the preheated oven for 30-35 minutes, or until the phyllo is golden brown and crispy.
  9. Once done, remove the spinach pie from the oven and let it cool slightly before slicing. Serve warm and enjoy!

This traditional Greek Spinach Pie not only makes for a delicious meal but also pairs well with a side salad and a glass of your favorite beverage. Enjoy your culinary journey into Greek cuisine!
