  • 2 medium zucchinis, sliced
  • 2 medium yellow squashes, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup bread crumbs (optional for topping)
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the sliced zucchini and yellow squash. Drizzle with olive oil, and toss to coat.
