Ingredients

To create the Sunshine Semlor, you will need the following ingredients:

  • 500g of flour
  • 75g of butter
  • 50g of sugar
  • 1 packet (7g) of dry yeast
  • 300ml of milk
  • 1 teaspoon of cardamom
  • 1 pinch of salt
  • 1 egg (for egg wash)
  • 250ml of heavy cream
  • 100g of almond paste
  • Powdered sugar (for dusting)

Instructions

Now that we have our ingredients ready, let’s start making these delightful semlor!

  1. In a small saucepan, gently heat the milk until it’s warm but not boiling. Add the butter to the warm milk and allow it to melt.
  2. In a large mixing bowl, combine the flour, sugar, cardamom, and salt, creating a well in the center.
  3. Sprinkle the dried yeast into the well and pour in the warm milk mixture. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until it’s smooth and elastic.
  5. Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  6. Once risen, punch down the dough and divide it into 12 equal pieces. Roll each piece into a smooth ball and place them on a baking sheet lined with parchment paper.
  7. Cover the dough balls again and let them rise for another 30 minutes.
  8. Preheat your oven to 375°F (190°C). Before baking, brush each semla with the beaten egg wash.
  9. Bake the semlor in the preheated oven for 15-20 minutes or until they are golden brown.

  12. Once the semlor are cool, slice off the tops and hollow out a little of the bread inside. Fill the hollow with the almond paste mixture, then pipe whipped cream on top.
  13. Place the tops back on and dust with powdered sugar before serving.
