Ingredients
- 4 large egg whites
- 1 cup granulated sugar
- 1 cup unsalted butter, softened to room temperature

- Begin by creating a double boiler. Fill a pot with a couple of inches of water and bring it to a simmer. Place a heatproof bowl on top, ensuring that the bottom of the bowl doesn’t touch the water.
- Add the egg whites and granulated sugar to the bowl. Whisk continuously until the sugar dissolves completely, and the mixture is warm to the touch (about 160°F or 70°C). This should take about 3-5 minutes.
- Once the sugar has dissolved, carefully transfer the mixture to a stand mixer bowl. Use the whisk attachment and beat on medium-high speed until the mixture turns into glossy peaks. This should take around 8-10 minutes.
