Ingredients
- 2 pounds of potatoes
- 1 large onion, sliced
- 6 ounces of lardons or diced bacon
- 1 cup of crème fraîche
- 1 cup of white wine
- 1 round of Reblochon cheese (about 7 ounces)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Start by peeling and slicing the potatoes into thin rounds, roughly 1/4 inch thick. Boil them in salted water for about 10 minutes until they are just tender, then drain and set aside.
- In a large skillet over medium heat, cook the lardons or bacon until they are crispy, about 5-7 minutes. Add the sliced onion and sauté until soft and translucent.
- In a baking dish, layer half of the cooked potato slices on the bottom. Sprinkle half of the bacon and onion mixture on top, then spoon in half of the crème fraîche. Repeat the layers with the remaining potatoes, bacon and onion, finishing with the last of the crème fraîche.
