  • 1 bell pepper, sliced (any color you like: red, yellow, or green)
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas (or green beans)
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning (optional)
  • Fresh parsley, chopped, for serving (optional)

Instructions

  1. Start by heating the olive oil in a large skillet over medium heat. Let that oil heat up, and it’s about to get delicious in there.
  2. Once the oil is hot, add the bell pepper, zucchini, and yellow squash to the skillet. Sauté those veggies for about 3-5 minutes, until they start to soften up and you can smell all that goodness.
  3. Now it’s time to throw in the broccoli and snap peas. Keep stirring and cooking for another 3-4 minutes. You want everything to be tender but still have a little bit of crunch!
