Texas Chicken Quesadillas

Ingredients:

  • 2 chicken breasts, cooked and shredded
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 4 large flour tortillas
  • 1 small onion, diced
  • 1 bell pepper, diced (any color)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking
  • Sour cream and salsa for serving

Instructions:

  1. In a skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and bell pepper, and sauté until they are tender, about 5 minutes.
  2. Add the shredded chicken, chili powder, cumin, salt, and pepper to the skillet. Stir to combine and cook for an additional 2-3 minutes to heat through.
  3. On a separate skillet, lightly grease it with a bit of olive oil. Place a tortilla in the skillet and sprinkle half of it with shredded cheese.
  4. Evenly distribute the chicken mixture over the cheese, then sprinkle more cheese on top. Fold the tortilla in half and cook until the bottom is golden brown and the cheese is melted, about 3-4 minutes.
  5. Carefully flip the quesadilla and cook the other side until golden brown, another 3-4 minutes.
  6. Remove from the skillet and repeat with the remaining tortillas and filling.
  7. Cut each quesadilla into wedges and serve hot with sour cream and salsa on the side.
