Tiramisu Layer Cake

Ingredients
- For the cake:
- 2 cups all-purpose flour
- 1 ½ cups sugar
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder

- 1 cup milk
- ½ cup vegetable oil
- 2 large eggs

- 1 cup strong coffee, cooled

- 2 cups heavy cream
- 1 cup mascarpone cheese
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- Cocoa powder for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, combine the milk, vegetable oil, eggs, and vanilla. Whisk until well blended.
- Gradually add the wet ingredients to the dry ingredients, stirring until just mixed.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Let the cakes cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.
- While the cakes are cooling, prepare the filling. In a large mixing bowl, beat the heavy cream, mascarpone, powdered sugar, and vanilla until soft peaks form.
- Once the cakes are cool, level them if needed. Place one cake layer on a serving platter and soak it with half of the cooled coffee.
- Spread half of the mascarpone filling on the first layer, then top with the second layer of cake, soaking that one with the remaining coffee.
- Spread the rest of the filling over the top and sides of the cake. Dust with cocoa powder to finish it off.
- Chill in the fridge for at least 4 hours before serving to let all the flavors meld together.
