Tropical Tiramisu

Ingredients

  • 1 cup of strong brewed coffee
  • 2 tablespoons of coffee liqueur (optional, but so good!)
  • 1 cup of heavy whipping cream
  • 1 cup of mascarpone cheese
  • 1/2 cup of sugar
  • 1 teaspoon of vanilla extract
  • 24 ladyfingers
  • 1 ripe mango, diced
  • Cocoa powder and shredded coconut for garnish

Instructions

  1. First off, brew that coffee strong! Let it cool and then mix in the coffee liqueur if you’re using it. Set that aside.
  2. In a mixing bowl, whip the heavy cream until stiff peaks form. This means you should be able to turn the bowl upside down without it falling out—now that’s some serious whipping!
  3. In another bowl, mix the mascarpone cheese with sugar and vanilla extract until smooth and creamy.
  4. Gently fold the whipped cream into the mascarpone mixture, being careful not to deflate that wonderful airy goodness.
  5. Time to dip! Quickly dip each ladyfinger into the coffee mixture, just long enough to soak them without getting too mushy. You want them soft, not soggy!
  6. Now, layer those ladyfingers in a dish, followed by a layer of that creamy mascarpone mix, and sprinkle some diced mango on top.
  7. Repeat the layers until you run out, finishing with a creamy layer on top. Cover and chill in the refrigerator for at least 4 hours, or overnight if you can wait (trust me, it’s worth it).
  8. Before serving, dust the top with cocoa powder and sprinkle some shredded coconut for that extra island vibe!

Your Tropical Tiramisu is now ready to impress! Serve it up, and watch everyone dig in with smiles on their faces. Enjoy every bite of this refreshing twist on a classic dessert!
