- 2 cups butternut squash, peeled and cubed
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 tablespoons fresh sage, chopped
- 2 cups marinara sauce
- 1 medium onion, chopped
- 3 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
- Add the ground turkey to the skillet, breaking it up as it cooks. Season with salt, pepper, and half of the chopped sage. Cook until the turkey is browned and cooked through, approximately 5-7 minutes.
- In a separate pot, steam the butternut squash until fork-tender, about 10 minutes. Once cooked, mash it lightly and mix it into the turkey mixture.
- In a baking dish, spread a layer of marinara sauce at the bottom. Place three lasagna noodles over the sauce, then spread half of the turkey and squash mixture over the noodles. Spoon half of the ricotta cheese on top, followed by a sprinkle of mozzarella and Parmesan.
- Repeat this layering process with another layer of noodles, turkey and squash, ricotta, and cheeses. Top with a final layer of noodles, the remaining marinara sauce, and the rest of the cheeses.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 15 minutes, until the top is bubbling and golden brown.
- Let the lasagna cool for a few minutes before slicing. Garnish with the remaining chopped sage and serve warm.
