Ingredients
- 4 boneless, skinless chicken breasts
- 100g (7 tablespoons) unsalted butter, softened
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh dill, finely chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups breadcrumbs
- Vegetable oil for frying
Instructions
- Start by preparing the garlic butter. In a bowl, combine the softened butter with minced garlic, parsley, dill, lemon juice, salt, and pepper. Mix until well combined.
- Transfer the butter mixture onto a sheet of plastic wrap and shape it into a log. Wrap it tightly and place it in the freezer for about 30 minutes until it’s firm.
- Preheat your oven to 180°C (350°F).
- While the butter is chilling, take the chicken breasts and gently pound them to an even thickness of about 1/2 inch. This will help them cook evenly.
- Once the garlic butter is firm, remove it from the freezer. Cut the log into four equal pieces.
- Place each piece of garlic butter in the center of a chicken breast. Fold the sides over the butter and then roll it up tightly, securing the ends. You can use toothpicks to hold them shut if needed.
- Set up a breading station with three bowls: one with flour, one with beaten eggs, and the last with breadcrumbs.
- Coat each chicken roll in flour, dip in the egg, and then coat with breadcrumbs, pressing firmly to adhere.
- Heat vegetable oil in a skillet over medium heat. Fry the chicken rolls for about 5-6 minutes on each side until golden brown.
- Transfer the fried chicken to a baking dish and bake in the preheated oven for an additional 15 minutes to ensure they’re fully cooked and the butter melts inside.
