    • 1 cup water (approx.)
    • 2 tablespoons vegetable oil
  • For the filling:
    • 1 pound ground meat (beef, pork, or a mix)
    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 2 tablespoons fresh parsley, chopped (optional)
    • 2 tablespoons vegetable oil (for frying)

Instructions:

  1. In a large mixing bowl, combine the flour and salt. Make a well in the center and crack the egg into it.
  2. Gradually mix in the water and oil until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap the dough in plastic wrap and let it rest for 30 minutes.
  3. While the dough is resting, prepare the filling. In a skillet, heat the oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
  4. Add the ground meat to the skillet and cook until browned. Stir in the salt, pepper, and parsley. Remove from heat and let cool slightly.
  5. Once the dough has rested, roll it out to about 1/8 inch thick on a floured surface. Use a round cutter (or glass) to cut out circles about 3 inches in diameter.
  6. Place a spoonful of the meat filling in the center of each dough circle. Fold the dough over, pinch the edges tightly to seal, and shape them as desired.
  7. Bring a large pot of salted water to a boil. Carefully drop the Varenyky into the boiling water in batches. They are ready when they float to the surface, usually within 5-7 minutes.
  8. Remove them with a slotted spoon and drain well. You can serve them immediately or sauté them in a bit of oil until golden brown for added flavor.
