Vegan Blueberry Muffins

Ingredients:
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 cup almond milk (or any plant-based milk)
- 1/3 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 tbsp apple cider vinegar
- 1 cup fresh blueberries (or frozen)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it with some coconut oil.
- In a large bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt. Mix well and set aside.
