Vegan blueberry muffins

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup almond milk (or any plant-based milk)
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tbsp apple cider vinegar
  • 1 cup fresh blueberries (or frozen)
  • 1 tsp baking powder
  • 1/2 tsp baking soda

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it with some coconut oil.
