Creamy Jackfruit Curry with Tomato, Coconut & Lime

This creamy jackfruit curry is a wonderful option for anyone looking to incorporate more plant-based meals into their diet. It’s packed with nutrients and has a rich, satisfying taste. Here’s how to make it:

Creamy Jackfruit Curry with Tomato, Coconut & Lime

Ingredients:

  • 1 can (20 oz) young green jackfruit in brine or water, drained and shredded
  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder (adjust to taste)
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • Juice of 1 lime
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions:

  1. Start by heating the coconut oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Stir in the ground cumin, ground coriander, turmeric, and chili powder. Allow the spices to toast for a minute to enhance their flavors.
  4. Next, add the shredded jackfruit and cook for about 5 minutes, stirring occasionally. This gives the jackfruit a chance to absorb all the wonderful spices.
  5. Pour in the diced tomatoes (with their juices) and the coconut milk. Stir everything together until well combined.
  6. Bring the mixture to a gentle simmer, then cover the pot and let it cook for approximately 20 minutes. The jackfruit will soften and take on the flavors of the curry.
  7. After 20 minutes, squeeze in the lime juice and season with salt and pepper to taste. Give everything a good stir.
  8. Serve the creamy jackfruit curry hot, garnished with fresh cilantro. This dish goes wonderfully with rice, quinoa, or even on its own!

I hope you enjoy this comforting and hearty dish as much as I do. It’s not only easy to make but also packed with vibrant flavors that will leave you wanting more. Happy cooking!
