Bitter-Sweet Bakery: Filo Vegetable Pie
This Filo Vegetable Pie is not only tasty but also beautifully presented, making it a wonderful dish to serve. The flaky layers of filo pastry sandwich a wholesome filling that’s sure to please everyone at the table.

Ingredients:
- 6 sheets of filo pastry
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, grated
- 1 zucchini, grated
- 1 red bell pepper, diced
- 200g spinach, chopped
- 200g ricotta cheese
- 1 egg
- Salt and pepper to taste
- Sesame seeds (optional, for garnish)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
- Add the grated carrot, zucchini, and diced bell pepper. Cook for about 5-7 minutes until the vegetables soften.
- Stir in the chopped spinach and cook until wilted. Season with salt and pepper to taste.
