Vegetarian Moussaka
This vegetarian version of Moussaka layers rich lentil sauce with creamy béchamel and tender roasted vegetables, creating a wholesome meal that’s satisfying and full of flavor.

Ingredients:
- 1 large eggplant, sliced
- 2 zucchinis, sliced
- 1 bell pepper, chopped
- 2 cups cooked lentils (or 1 can, drained)
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons ground cinnamon
- 1 teaspoon nutmeg
- Olive oil, for frying
- Salt and pepper to taste
- 1 cup milk (or plant-based milk)
- 2 tablespoons flour
- ¼ cup grated cheese (optional)
Instructions:
- Preheat your oven to 375°F (190°C). In a large frying pan, heat some olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent.
