Welsh Cakes

Welsh cakes are a traditional treat from Wales, often enjoyed warm and dusted with sugar. They’re a wonderful blend of fruity, spiced, and buttery goodness. Here’s how to make them.

Welsh cakes

Ingredients

  • 225g (about 1 ¾ cups) all-purpose flour
  • 100g (about ½ cup) unsalted butter, softened
  • 75g (about ⅓ cup) caster sugar
  • 1 tsp baking powder
  • 1 tsp mixed spice or cinnamon
  • 1 large egg
  • 150g (about 1 cup) currants or raisins
  • Milk, as needed
  • Sugar for dusting

Instructions

  1. In a large mixing bowl, combine the flour, baking powder, and mixed spice (or cinnamon). Mix well to ensure all the dry ingredients are evenly distributed.
  2. Add the softened butter into the flour mixture and rub it together with your fingers until it resembles breadcrumbs.
  3. Stir in the sugar and currants or raisins. Make a well in the center, and crack the egg in, mixing it gently. If the mixture feels too dry, add a splash of milk until it all comes together to form a soft dough.
  4. Flour a clean surface and roll out the dough to about ½ inch thick. Using a round cutter, cut out individual cakes.
  5. Heat a cast-iron skillet or griddle over low to medium heat and lightly grease it. Place the cakes in the skillet and cook for about 3–4 minutes on each side or until they turn golden brown.
  6. Once cooked, place the cakes on a wire rack to cool slightly. While still warm, dust them with a little sugar.
  7. Serve the Welsh cakes warm, or store them in an airtight container for later enjoyment. They can be rewarmed briefly before serving for that freshly baked taste!

Enjoy these scrumptious Welsh cakes with a cup of tea, or even just on their own! They’re sure to be a hit with family and friends.
