  • 4 bell peppers (any color)
  • 2 medium zucchinis or yellow squashes
  • 1 lb ground beef, turkey, or a plant-based substitute
  • 1 cup cooked rice (white, brown, or quinoa)
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Olive oil, for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Start by prepping the bell peppers and squashes. Cut the tops off the peppers and remove the seeds. For the squashes, cut them in half lengthwise and scoop out some of the flesh to create a hollow cavity.
  3. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and garlic, sautéing until they become translucent.
  4. Next, add the ground meat (or your chosen substitute) to the skillet. Cook until browned, breaking it up with a spoon as it cooks.
