Roasted Butternut Squash & Turnip Soup

Ingredients:

  • 1 medium butternut squash, peeled and cubed
  • 2 medium turnips, peeled and cubed
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon ground cumin (optional)
  • Fresh herbs for garnish (like parsley or cilantro)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, toss the cubed butternut squash, turnips, onion, and garlic with olive oil, salt, pepper, and cumin (if using). Spread them out in a single layer.
  3. Roast the vegetables in the oven for about 25-30 minutes, or until they are tender and starting to caramelize, stirring occasionally.
  4. Once roasted, transfer the vegetables to a large pot. Pour in the vegetable broth and bring the mixture to a boil.
  5. Reduce the heat and let it simmer for about 10 minutes to let the flavors meld together.
