Ingredients
- 1 cup brown sugar
- 1 cup granulated sugar
- 1 cup butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 3 cups old-fashioned rolled oats
- 2 cups cornflakes
- 1 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large mixing bowl, cream together the brown sugar, granulated sugar, and softened butter until light and fluffy.
- Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until just combined.
- Fold in the oats, cornflakes, and chocolate chips (if using) until evenly distributed throughout the dough.
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving enough space between each cookie for spreading.
- Bake in the preheated oven for about 10-12 minutes or until the edges are lightly browned. Remember, they’ll continue to cook a bit even after you take them out, so don’t overdo it!
- Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
These cookies are perfect for sharing with family and friends or just to enjoy with a glass of milk. So go ahead, bake a batch, and enjoy some quality time in the kitchen just like Grandma used to do!
