  • 2 cups cooked, shredded pork
  • 1 cup queso cheese, shredded
  • 8 corn tortillas
  • 1 can (10 oz) enchilada sauce
  • 1/2 cup chopped onion
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix the shredded pork with half of the enchilada sauce, cumin, garlic powder, and onion. Season with salt and pepper.
  3. Warm the corn tortillas in a microwave for about 30 seconds, or until pliable.
  4. Spread a small amount of the remaining enchilada sauce on the bottom of a baking dish to prevent sticking.
