Tamales Rojos

Ingredients

To embark on this culinary journey, you’ll need the following ingredients:

  • 2 cups masa harina (corn dough flour)
  • 1 cup chicken broth (or vegetable broth for a vegetarian option)
  • 1/2 cup lard or vegetable shortening
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup red chili sauce (made from dried red chilies)
  • Filling of your choice (shredded chicken, cheese, or vegetables)
  • Husks of corn (soaked in warm water for at least 30 minutes)

Instructions

Now that you have your ingredients ready, it’s time to roll up your sleeves and get cooking!

  1. In a mixing bowl, beat the lard or vegetable shortening until fluffy. Gradually add the masa harina, baking powder, and salt.
  2. Slowly pour in the chicken broth until the dough has a light and fluffy consistency.
  3. In a separate bowl, combine your filling with the red chili sauce for added flavor.
  4. Take a soaked corn husk and spread about 2-3 tablespoons of the masa dough on it, leaving enough space at both ends to fold.
  5. Add a spoonful of your prepared filling in the center of the dough.
  6. Fold the sides of the corn husk in toward the center and then fold up the bottom to secure the filling inside.
  7. Repeat this process until all dough and filling are used up.
  8. Place the tamales upright in a steamer pot, cover with additional husks or a damp cloth, and steam for about 1-1.5 hours, or until the masa easily pulls away from the husk.

Once they’re done steaming, serve your tamales hot with more chili sauce or salsa on the side. Enjoy them with loved ones, and savor every delicious bite. Happy cooking!
