Ricotta Cookies – MYP Food Project
These cookies are light, fluffy, and packed with flavor. The ricotta cheese gives them a unique texture that keeps them moist and delicious. Plus, they’re a great way to impress your friends and family at your next gathering!
Ingredients
- 2 cups ricotta cheese
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 teaspoons baking powder
- 4 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup powdered sugar (for icing)
- 1-2 tablespoons milk (for icing)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, mix together the ricotta cheese, granulated sugar, and softened butter. Beat until creamy and well blended.
- Add in the eggs and vanilla extract. Mix until fully combined.
- In a separate bowl, whisk together the baking powder, flour, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined. Be careful not to overmix!
- Using a spoon or cookie scoop, drop heaping tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes, or until the cookies are lightly golden around the edges but still soft in the center.
- While the cookies are baking, prepare the icing. In a bowl, mix the powdered sugar with enough milk to achieve a drizzleable consistency. Adjust the milk and sugar as needed.
- Once the cookies have cooled, drizzle the icing over the top to add that special touch!
- Let them set for a few minutes, then serve and enjoy!
These Ricotta Cookies are sure to be a hit, bringing a smile to everyone’s face. Perfect for parties, family gatherings, or just a little snack when you’re feeling sweet. Happy baking, y’all!
