- 1 can black beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- 1 can corn, drained

- Optional toppings: shredded cheese, sour cream, chopped cilantro, tortilla chips
Instructions:
- In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat.
- Add the chopped onion and cook until soft, about 3-4 minutes.
- Stir in the ranch dressing mix and taco seasoning until the meat is well-coated with the spices.
- Transfer the meat mixture to your crockpot (or keep it in the skillet for stovetop cooking).
- Add the black beans, kidney beans, corn, diced tomatoes with green chilies, and the broth. Season with salt and pepper to taste.
- If using a crockpot, cover and cook on low for 6-8 hours or on high for 3-4 hours. For stovetop cooking, bring to a simmer and let it cook for about 20-30 minutes, stirring occasionally.
- Once cooked, taste and adjust the seasonings as necessary.
